Gluten Free Ginger Bread Men.

Last year for the school fete I pulled an all nighter and made a hundred little GF ginger bread men. It was my first school fete as a mum and I was going for gold.
The little gingers where delicious, I lovingly decorated them, placed them in glass jars with retro fabric and a ribbon to top. I proudly handed them to the ladies running the bake sale and low and behold there were a hundred other amazing creations, some crazy talented mums at our school.
I’ve started thinking about my creation for this year although the fete is 8 months away. Happy to bake for school fundraising!
This is the winning recipe and my tip is not to make them too thick.

All you need

  • 1 packet (400g) Premium Biscuit Mix.
  • ¼ tsp. clove
  • ¼ tsp. Mixed Spice
  • 50g soft margarine
  • 50ml water
  • 3tblsp honey
  • GF flour for dusting

Preheat your oven to 165°C (150°C fan forced)
In a large bowl combine biscuit mix with the spices, add margarine, water and honey and mix by hand, until the dough comes together.
Dust you bench with GF flour and roll the dough into a 6 – 8 mm thick sheet; use cookie cutter to cut to desired shape.
Place on lined tray and set to bake for 17 – 20 minutes.
Remove from oven and leave on the tray to cool. Best stored in an airtight container.

    I have only recently become gluten intolerant. I found this store and ordered a sample pack of goods. I did not know what to expect from these biscuits. As it is Christmas time I added some choc bits and dried cranberry. Boy did they taste good! I am back for more!
